Kristen Pavez - Zesty Asian Slaw Recipe

Ingredients

1/2 a Red Cabbage

1⁄2 a bunch of Kale

1 large red capsicum, finely sliced into strips,

3 carrots, peeled & finely sliced or julienned

1 large bunch of mint and coriander pick off leaves

1 white salad onion finely chopped

Optional: 2 large green chilli’s – de-seeded & finely chopped

Optional for extra nutrients: 2 TBSP of Sauerkraut

FOR DRESSING:

2 TBSP Coconut Yoghurt

2 TBSP Apple Cider Vinegar

5 TBSP EVOO

1 Clove of Garlic, finely chopped

Juice of 1 Lemon or Lime

2 tsp of good salt

Pepper
